Authentic
Key Lime Pie
This
recipe was acquired when I was visiting fabulous Key West,
Florida !!
Hence it is very delicious and very authentic.
This was my dessert of choice after dining on a superb
entrée of Coconut Shrimp in an awesome houseboat that
had been turned into a gourmet restaurant, nestled in a small
port off of the peer in the heart of town.
Key
Lime Pie
4
Eggs, separated
½
cup Lime Juice
14-Ounce
can sweetened condensed Milk
½
Teaspoon Cream of Tartar
1/3-Cup
Sugar
Beat
Egg Yolks until light and thick.
Blend in lime juice, then milk, stirring until mixture
thickens. If
desired, add a few drops of green food coloring.
Pour mixture into baked pie shell.
Beat egg whiles with cream of tartar until soft.
Gradually beat in sugar, beating until glossy peaks form
(oooo!!) Spread
eggs whites over surface of pie to edge of crust.
Bake in 350 degree oven until golden brown, about 20
minutes. Chill
before serving (the pie, not you!)
*
design tip – Spread the meringue on the pie and then create
swirl-y peaks with a butter knife all over the top!
